chapathi pizza

Chapathi pizza sounds different! But it is very easy to prepare at home and a great snack, a wonderful lunch box recipe for kids.Though I tried different pizza recipe I haven't tried this recipe.One day I tried this recipe in my kids lunch box recipe and it was a big hit with both of my kids.As it is very easy to prepare at home when you have everything ready for pizza.I folded and cut into two in kids lunch box.They enjoyed to the core.Here goes my recipe.


Ingredients:


  • chapathi 1
  • capsicum 1/4 cup long thinly sliced(both red and green)
  • onions sliced 1/4 cup( vertically thinly sliced)
  • oregano 1/4 tspn
  • dried basil 1/4 tspn
  • Red chilli flakes dried few or 1/4 tspn
  • pizza sauce1 tbspn
  • Mozerella grated cheese 1/4 cup
  •  Fried paneer cubes 2 to 3

PIZZA SAUCE 
Ingredients: 


  • 3 tomotoes
  • 1 tsp chopped garlic
  • dried basil and oregano 1/2 tspn
  • chopped onions 1/4 cup or 1 onion finely chopped
  • Pepper a pinch

Method: 
Blanch tomatoes by boiling tomatoes in hot boiling water for 3 to 4 mins.Remove from heat and peel the skin and grind tomatoes into fine paste.
 Heat a pan add a tsp of oil,once heated up add garlic  saute and add finely chopped onions.little salt, little pepper.Fry few mins then add oregano,basil,followed by tomato paste.
cook few mins until tomato paste little thickens around 5 to 6 mins in medium flame.
Yummy home made pizza sauce is ready.

PROCEDURE FOR CHAPATHI PIZZA:


  • Heat a chapathi  pan ,fry chapathi on both sides for a min or until just brown spots appear on both sides.Keep the less brown spots side chapathi facing bottom.Turn the stove to low flame.
  • spread 1 tbspn of pizza sauce on top of chapathi.
  • Sprinkle cheese on top of chapathi, and arrange veggies like capsicum onions on top of cheese.
  • sprinkle some oregano and basil on top.Add some fried paneer on top.
  • Again add few more grated cheese on top and little italian seasoning and redchilli flakes.
  • close the lid and let it cook on low flame or until cheese melts.
  • Yummy chapathi pizza is ready.

Falafel

Falafel is a patty made with ground chick pea flour.It is a middle eastern food,usually served with Pita bread.Falafel become a pretty common form of street-food in Middle east. Falafel plays an important role in Israeli cuisine and considered as national dish of the country.Now a days it is pretty common in most of the restaurants in North America.This dish is very healthy dish as it is made with chickpeas,which has a high protein and essential nutrients.Falafel replaces meat for Vegetarians and has become popular among vegeterians. I tasted Falafel first time in Middle East restaurant,and I loved it.Tried falafel first time at home and it came out very well.It tastes similar to our chana dal vada..Here you go posting my version of Falafel.






Ingredients:

  • chickpeas or chole 2cup( 160 ml cup)
  • spinach 1 cup
  • onion 1/2( smaller one)
  • coriander leaves 1/2 cup
  • jeera or cumin seeds 1 tspn
  • garlic 3(large) cloves
  • green chilli 3
  • Maida 2 tbspns
  • salt to taste.

Procedure:


  • Soak chick peas overnight for 6 to 7 hrs.Drain the extra water and keep aside.
  • Cook spinach in boiling water for 2 mins.Drain water and keep spinach aside..
  • Grind chickpeas,chopped onion,garlic,spinach,jeera,coriander leaves,salt, green chilli, into coarse  batter using very little water.( hardly 2 tbpns of water)
  • Add Maida to the batter.Make round balls(each lemon size) and flatten  the ball slightly pressing it on top.
  • Heat oil in a pan for deep fry,once it is hot slowly drop flatten balls into the oil.Fry both sides until brown.
  • Yummy Falafel is ready.You can have it with hummus or eaten just like that .

NOTE: I ADDED MORE SPINACH SO THE COLOR IS LITTLE DARK.YOU MAY REDUCE THE QUANTITY OF SPINACH.

Chenna poda

Chenna poda is a cheese dessert from the state of Odisha in eastern India.It is made of well kneaded homemade cottage cheese or chenna,sugar and nuts and is baked for few mins till it is brown. Chenna poda is usually made at home during traditional festivals in Odisha. .It is also served in traditional road side stalls. Chenna poda literally means burnt cheese.It is simple easy absolutely delicious dessert. When ever I visit orissa I love to,eat this sweet.This time when I  go to India sure I won't miss this sweet. Here I prepared with frozen paneer as I don't get enough time to cook paneer  at home..I'm posting this simple paneer or cottage cheese dessert called Chenna poda in Bm#50 under the theme one ingredient different dishes.Here goes my recipe.



Ingredients:

  • Paneer 1 cup( preferably fresh paneer)
  • Sooji or semolina 1 tbspn( Soaked in water for 5 mins and drained)
  • Sugar 1/2 cup
  • Ghee 1 Tspn
  • Milk 1 tbspn
  • Nuts chopped 2 tbspn
  • Cardamom powder 1/4 tspn

Procedure:


  • Take a bowl ,add paneer mix it smoothly.Add sugar to it.
  • Now add sooji,milk,ghee, dry fruits and cardamom powder,mix it thoroughly
  • To get a caramelized effect apply a tablespoon of ghee to the bottom of the baking dish,sprinkle with sugar and hold it slightly above gas stove for few mins.
  • When it changes the color or caramelized,then pour the paneer mixture  over the sugar
  • Bake it in a preheated oven at 350F around 25 to 30 mins.
  • Check inserting a tooth pick.If it comes out clean,then it is done.cool 10 to 15 few mins then ready to eat .you can cut into desired shape and enjoy..

Paneer pockets

Paneer is the star ingredient in most Indian dishes.Anything with paneer we just love to eat.When I was thinking what else I can cook with paneer,as I already prepared lot of paneer dishes,so thought of doing this easy yummy appetizer.It is great snack during kids parties and get togethers.My elder one is a foodie,he loves to eat paneer any form. Though both my kids are chicken lovers I regret to cook non vegeterian some specific days in a week.Those days I prepare paneer varieties.Yesterday when My son came back from school I surprised with this yummy snack.He just love it.I'm posting this recipe in Blogging Marathon #50 under the theme one ingredient different dishes.Here goes my recipe.


Ingredients
  • Paneer 1/2 lb( chopped)
  • Jeera 1/2 Tspn
  • Onion 1/2 finely chopped
  • Ginger garlic paste
  • Green chilli 2
  • Red chilli powder1/2 Tspn 
  • Garam masala power 1/4 Tspn
  • Tomato  1/4 chopped ( optional)
  • Salt to taste
  • Oil 1 tbspn

Procedure:
  • Heat oil in a pan,when it is hot add Jeera ,when it starts spluttering add chopped onions fry well then add ginger garlic paste.
  • After few mins add tomato ( optional) I prefer without tomato it is more tasty. Fry well then add chopped paneer pieces I just break into small pieces with my hands.
  • Fry few mins add garam masala powder red chilli powder and salt. After 3 to 4 mins switch off the stove and garnish with Corriander leaves.
  • Paneer stuffing is ready.Now preheat oven to 375F.( Mine is convection mode fan on)
  • Take a refrigerated puff pastry sheet half an hr before baking( here I always use pepperidge farm puff sheets usually get it any grocery store)
  • Divide the puff sheet into small finger length squares. Stuff 1 or 2 Tspn above prepared paneer inside and fold all sides carefully ( use little water when folding)
  • Bake 20 to 25 mins in preheated oven or until those are golden color.

Gobi Manchurian

Ingredients:

  1. Cauliflower  1 small size
  2. Onion 1 finely chopped
  3. Garlic 5  to 6 pods finely chopped
  4. Spring onions 4  finely chopped
  5. Chilli tomato sauce 4 tspns
  6. Soya sauce 2 to 3 tspns
  7. Pepper powder 2 tspns
  8. Salt to taste
  9. Maida or all purpose flour 2 tbspns
  10. Corn flour 2 tbspns
  11. Baking soda 1 or 2 pinch
  12. Oil    As needed

Preparation:

                  Prepare a batter with corn flour,maida and baking soda.It should be thick enough to coat the cauliflower.


Procedure::

  1. Wash the cauliflower florets and immerse in hot boiling water for 5  to 10 mins.After that take out the florets and drain it .
  2. Slowly dip the well drained florets in the batter or we can mix all in it.Deep fry until crispy and keep aside. 
  3. Take another wide pan add 2 to 3 tbspn of oil and add chopped garlic.Stir few mins then add finely chopped onions,fry till they are golden brown.Add both soya,tomato chilli sauces,salt,pepper powder and mix well.If you doesn't want too much  dry You may take 1/2 cup of water and add 2 tspns  of corn flour, mix it well.Add this to the pan.
  4. Now add deep fried cauliflower florets,mix well evenly.Lastly we can add finely chopped spring onions and mix well for 1 or 2 mins.That's all yummy gobi manchurian is ready.

VADA CHAT

Ingredients:



  1. urad dal 1cup
  2. oil for deep fry
  3. chat masala 1 Tspn
  4. Jeera powder1tspn.
  5. Green chilli's cut into small pieces.
  6. chilli powder 1 Tspn
  7. One lemon
  8.  Onion &tomato cut into small pieces. 


Preparation:

 First we have  to prepare vada,for that we have to soak urad dal at least 5 hrs,then grind it.Then add salt to the batter and deep fry in oil with round shape hole in the middle as shown the pic.


Procedure:








  1.  Cut vada into small pieces.Then take a wide bowl mix chopped onions and tomato pieces.
  2.  Add chilli powder( you can add green chillis if we prefer more spicy),chat masala,jeera powder to the vada pieces.
  3. Now sprinkle some lime  juice on top of it.Garnish with coriander leaves.Yummy vada chat is ready now. We can have it as a snack.

Dahi vada(perugu vadalu)

Ingredients:
1.urad dal 1 cup
2.Green chillies 2
3.onion 1
4. Ginger cut into small pieces.
5.  Oil for deep fry.
6. Curd( preferably home made
7. For seasoning(mustard, curry leaves,red chillies,jeera powder ,little oil)
8.salt to taste.
Procedure:To prepare dahi vada or peruguvada we have to prepare vada first.I prefer grinding urad dal in a food processor as it gives soft and crispy texture to the vada.After I get ready my vada batter I add green chillies,cut onion ,ginger pieces and I mix well.when my batter is almost ready I deep fry in oil until it cooks well.Take out in a tissue paper and soak just 2 mins in cold water, in this way Vada absorbs curd perfectly.Mean while get ready dahi mix,for this I take a small deep vessel and I mix 2 cups of curd till it is soft.Then add tadka(talimpu) to it.When my vada is almost done I take out and put it In a tissue for few secs then I slowly transfer to the dahi mix.Lastly I just sprinkle jeera powder on top of it.I refrigerate few hrs for getting very good taste.

Soya bean vada(soya chuncks)

Ingredients
2 cups of soya chunks
1 cup of Atukulu( poha)
1 tb spoon of ginger& garlic paste
 2 small onions
Green chillies 2
Besan(sanaga pindi) 3 tspn
corn flour 2tspn
salt to taste.



Procedure:  Cook  soya chunks in hot boiling water for two to three mins until they are soft.Make sure we don't add salt to the water.Then after  squeeze the water from soya chunks and put it in a bowl. Cut the soya chunks into small pieces and add  all above ingredients to it.Make a tight paste like vada by adding small pieces of cut onions and greenchillies.We can add coriander leaves if we like it.Adjust salt according to your taste.Deep fry in oil.Believe me you will never forget the taste, so yummy.Enjoy!
