Eggless vanilla cake

Vanilla cake  is one of the first cake I learnt when I'm new to baking..Later I tried so many different types of cakes but, my favorite is always this classic vanilla cake.Whenever my hand itches to bake something I love to bake this simple vanilla cake..I tried both with egg and eggless recipes..But I love this eggless recipe a lot...Coming to the story behind this vanilla cake  is the famous tv show Tom and Jerry where both Tom and Jerry bakes vanilla cake for their  friend puppy on his birthday..This entire story narrated by daughter who watches tom and Jerry episodes regularly. I'M posting this recipe in BM#54 under the theme kids recipe from story books and tv shows..Here goes my simple recipe..



Ingredients:

  • All purpose flour 1 1/2 cup( 1 cup+1/2 cup)
  • Baking powder 1 1/4 tspn( 1 tspn + 1/4 tspn)
  • Baking soda 1/2 tspn
  • Thick curd or yogurt  1cup
  • Vanilla essence 1 tspn
  • Sugar( powdered)3/4 cup
  • Oil 1/2 cup
Procedure :

  • Preheat oven 400F.
  • Grease baking tray with oil or butter
  • Now mix sugar and yogurt mixture in a bowl until creamy around 2 to 3 mins
  • Add baking soda baking powder to the flour in another bowl
  • Mix vanilla essence and oil in sugar yogurt mixture
  • Now slowly add little by little the flour mix to the creamy yogurt mix .
  • Fold it nicely( mix with hand mixture for less than a min)
  • Keep it in preheated oven I.e 400F for 5 mins and then reduce to 375 f and bake around 25 to 30 mins or until toothpick inserted comes out clean.
  • Cool it for 20 mins completely, then reverse,cut it and enjoy!

Vanilla cup cakes

Vanilla cup cakes  very simple, easy recipe with a great moist texture and awesome in taste.Vanilla flavor loved by all my family members.I haven't prepared cupcakes till now as I'm worried about frosting. I don't like to eat cupcakes with frosting always,but my kids love to have frosting, so I Tried finally. so thought about a try.These are my first cup cakes with frosting.Vanilla cup cakes with perfect  vanilla cream cheese frosting.,a perfect cupcakes with great taste.My kids loved my cup cakes and keep asking me more..Here goes vanilla cup cakes and vanilla cheese cake frosting recipes.
This week I'M posting kids recipes inspired by kids stories or tv shows.Here goes one of the popular tv show Max and Ruby in Nick junior..This television series gives kids a sense about how these two siblings resolve their conflicts in a humorous and entertaining way.
 My kids used to watch when they are in preschool..Now it is different situation both of them wanted to watch different cartoons..But they loved to watch each and every episode of Max the Ruby.Ruby always wanted to bake cupcakes..So my inspiration came from this TV show.I followed recipe in food network. .It came out well.Here goes yummy vanilla cup cakes.





Ingredients:

  • 1 1/4 cups of all purpose flour( 1 cup +1/4 cup)
  • 1 1/4 Tspn baking powder
  • 1/2 tsp of baking soda
  • 1/2 Tspn salt
  • 2 large eggs
  • 3/4 cup sugar
  • 1 1/2 Tspn vanilla extract
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk

Procedure:



  • Preheat oven 350F and line a muffin/cup cake pan with liners.
  • Take a bowl,whisk together flour,baking powder,baking soda and salt.
  • In another bowl beat eggs using hand blender or electric mixer until fluffy.( around 20 sec)
  • Add 3/4 cup sugar and continue to beat on medium speed around 30 sec.
  • Now add vanilla extract, vegetable oil, beat another one more minute.
  • Add buttermilk slowly and flour alternatively.Beat until just combined and smooth.
  • Pour batter into a lined muffin pan.Fill about 1/2 full.
  • Bake around 12 to 15 mins at 350 F.Mine done around 15 mins.Cool it for some time and enjoy.


Vanilla cream cheese frosting

  •   cream cheese softned 8 oz packet( mine is Philadelphia cream cheese original)
  • 1/2 cup butter,softened
  • 2 cups confectioner sugar(powdered sugar)
  • 1 teaspoon of vanilla extract or  vanilla essence


Method: 
In a bowl cream together  cream cheese and butter until creamy.Mix in the vanilla essence,then gradually stir in confectioners sugar.Store in the refrigerator after use.When the cupcakes completely cools down spread cream cheese and sprinklers on top.Yummy cupcakes are ready.

Pinwheel cookies(egg less)

Chocolate pinwheel cookies will make a wonderful Christmas treat for kids.These fun cookies with their spirals  of chocolate and nut with vanilla flavor are perfect for parties.Last week When I prepared this recipe  it was a huge hit in my home.Kids loved it especially younger one a picky eater liked it asking it again and again.Here goes my wonderful recipe..These pinwheel cookies were in the  Kids Christmas story books but I don't remember the specific name, my daughter love to have these cookies  So,with much patience I tried one day..Iam more inspired from Foodnetwork channel,where I  got the recipe.I'm posting it BM#54  Under the theme recipes from kids story books or tv shows.





Ingredients:

  • All purpose flour  1 and 3/4 cup(1 cup+3/4 cup)
  • sugar  3/4 cup( you can use less than 3/4 cup)
  • Butter 2/3 cup
  • Yogurt  1/4 cup( you can replace yogurt with 1 egg)
  • Baking powder  1/2 tspn
  • Salt a pinch
  • Vanilla extract  1 tspn
  • Grounded almonds  1/3 cup
  • Almond extract  1/4 tspn
  • Cocoa powder unsweetened  1/4 cup



Procedure:


  • Cream the sugar and  the butter together,beat in the yogurt and vanilla extract.Now slowly add the baking powder,salt and mix well.Then add the flour and stir it to form a soft dough.
  • Make a round ball and divide it into half evenly.
  • Take one half and blend in the almond extract and grounded almonds.To the other half add cocoa and blend it well.
  • Roll out each of the dough portions between sheet of wax paper( wax paper avoids sticking to the rolling pin)
  • Form each dough into 14 inch rectangle,make sure dough is even thickness all over.Place each rolled out piece in the refrigerator for half an hour.
  • After half an hour take out and remove the wax paper top from the chocolate dough and do with the white dough.Place chocolate dough on top of almond dough.
  • Roll up tightly starting from the long side.If the dough cracks while rolling wait few more min to warm up.Wrap the finished dough in a wax paper and refrigerate 5 to 6 hrs.
  • After 5 to 6 hrs take out from the refrigerator and cut the roll into 1/4 slices.Place  these slices on an baking sheet or tray and bake at 350F around 15 to 20  min.( pre heated oven)
  • Take out  the cookies once the edges are brown and let it cool.Enjoy chocolate and nut cookies(these are crunchy cookies)

Blueberry Muffins

Muffins typically refers to an individual sized quick bread product which can be sweet or savory.Blueberries have incredible nutrition and health benefits.From their rich color to their amazing qualities,blueberries can provide you brighter vision and healthier brain function.More than a couple studies show blueberries improve brain function.Blueberries are high in fiber and antioxidants.Muscle up against cancer with a daily cup of blueberries.Blueberries are loaded with vitamin c and fiber.Another fact,blueberries have the highest levels of antioxidants than any other fruit.Because of its numerous health benefits one should include blueberries daily in their diet.Here goes yummy blueberry muffins.I'm posting this in BM#54 under the theme One bite appetizer.


Ingredients:

  • 2 cups all purpose flour
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon  of vanilla extract or vanilla essence
  • 2 teaspoons of baking powder
  • 1/2 Tspn salt
  • 1/2 cup butter
  • 1/2 cup milk
  • 2 cups fresh or frozen blueberries





Procedure:

  • Preheat oven to 375F.
  • Arrange a tray with muffin liners
  • In a bowl mix butter until creamy.Add sugar and beat until fluffy.
  • Beat eggs in  another bowl until fluffy and the add to butter and sugar mix.
  • Add vanilla extract ,followed salt and milk .
  • Mix dry ingredients  all purpose flour,baking powder,salt in another bowl.
  • Slowly add flour mix to the butter mix.
  • Then fold in blueberries
  • Bake around15to20mins ,golden brown

Soya chunks poha Vada

Soya chunks is an excellent addition to our diet.These are odourless  food item,but this unique food is highly nutritional and full of rich proteins. Soya chunks easily available in packets,So very easy to get and great source of protein for vegetarians.Long back I have seen this recipe in tv show and I noted in a book( I have not started blog then).My first fav recipe in the TV  show...A great appetizer for everyone.Just vanishes within mins..Soya chunks and poha is a unique combo and great combo which yields a good taste.Here I'm posting soy chunks poha vada in BM#54 under the theme one bite appetizer..



Ingredients:
  • Soya chunks 2 cups ( 180 ml cup)
  • Poha or beaten rice( atukulu) 1 cup
  • Ginger garlic paste 1 Tyson
  • Onions chopped ( 2 small onions)
  • Green chili 2 chopped
  • Besan or chickpea flour 4 Tbspn
  • Corn starch 2 Tspn
  • Salt to taste


Procedure:

  • Cook soya chunks in hot boiling water  for 3 to 4 mins( don't add any salt)
  • Then strain the water and let the soya chunks cool down, squeeze extra water from it.
  • Chop the soya chunks into small pieces with knife or can use food processor ,keep aside in a bowl.
  • Now add all ingredients ( besan,cornflour,green chili,onions,ginger garlic paste,poha, salt) mix it well.
  • You may add few drops of water if the dough is little dry.Now take small amount on your palm and press it as we do it for Vada.
  • Heat oil in a pan,when it is hot fry these vadas in medium flame until golden brown on both sides.

Baked corn bread pockets

Baked Corn bread pockets is a very simple appetizer for kids,ready in few mins.Corn and few veggies makes a great evening snack for kids.It was so crispy to enjoy each bite.Simple white bread and few corn kernals makes wonderful snack.I'm posting this recipe in BM#54 under the theme one bite appetizer.





Ingredients:


  • Bread 4 slices( big size)
  •  Corn kernals 1/2 cup( frozen)
  • Capsicum or green pepper 1/4 cup chopped
  • Carrot grated  3 tbspn
  • Small red onion chopped ( optional)
  • Chat masala 2 tspns
  • Chilli flakes 1 /2 tspn
  • Pepper powder  1  tspn
  • Mozerrala cheese 4 tbspn
  • Butter 2 tspn just to brush outside
  • Salt to taste
Procedure:


For stuffing

  • Heat 1 tbspn oil in pan,slowly fry corn,( if using fresh corn boil 3 to 4 mins)capsicum and onions, carrot  well until they are soft
  • Add chat masala ,pepper powder,chili flakes fry one more min.
  • Switch of the stove,let it cool completely.
  • Now trim edges of the bread and roll with a rolling pin to make thin squares
  • Take little water in a bowl,slowly wet the sides of the bread with water.( just to fold easily)
  • Keep 1 or 2 tbspn of stuffing in the bread.Sprinkle mozzarella cheese on top,Roll the bread carefully.Fold sides carefully.Brush outside of the rolls with butter.
  • Preheat oven 400F. Slowly arrange bread pockets in a baking tray.( watch out the breads carefully they may easily burnt)
  • Bake around 10 to 11 mins( Turn  other side  after 5 mins, so that both sides fry well)
  • Enjoy yummy crispy snack.
