Strawberry icecream

Strawberry ice cream is a flavour of ice cream made with strawberry flavoring.It is made  by blending in fresh strawberries, cream vanilla and sugar.. Another basic flavored ice cream is strawberry ice cream. This is easy ice cream  and I prepared without eggs.As I don't have ice cream machine I tried just  blending. My daughter love to have strawberry flavored ice cream .Even I love strawberries,So prepared this simple strawberry ice cream.I'm posting in BM#53 under the theme ice creams.



Ingredients:

  • Whole milk 2 cups
  • Heavy cream or heavy whipping cream 1 1/2 cup( 1 cup +1/2 cup)
  • White sugar( powdered) 1 cup
  • Salt optional( 1/4 tspn)
  • Vanilla extract 2 tspns
  • Fresh Strawberry purée 2 cups
  • Rose syrup  optional  3  or 4 drops

Procedure:

  • Take a large bowl,combine milk and sugar well.
  • In another bowl, whip the heavy cream just for 1 or 2 mins.
  • Add milk sugar mixture to the whipping cream followed by vanilla extract and strawberry purée and few drops of rose syrup.
  • Blend everything well in a blender and pour it in a freezing bowl.
  • Freeze around 6 to8 hrs stirring in between after 1 hr to avoid crystal formation is must.( if you have ice cream machine this step is not needed)
  • Enjoy yummy ice cream after 6 hrs.

Chocolate ice cream

chocolate ice cream is ice cream with natural or artificial chocolate flavoring.Chocolate is the second most common flavor of ice cream  in the united states.It can be eaten in a bowl,cup or cone.This is very simple and easy ice cream without eggs.This simple classic chocolate ice cream can be done without ice cream machine.Kids love it anything with chocolate.My son loves chocolate ice cream and daughter loves vanilla ice cream.So I prepared both one each week..I'm posting different ice creams in BM#53 under the theme ice creams.Here goes my simple chocolate ice cream recipe.

Ingredients:
  • Coco powder ( unsweetened) 1/2 cup ( 250 ml cup)
  • Brown sugar 1/2 cup
  • White sugar 3/4 cup
  • Whole milk 3/4 cup
  • Heavy cream or heavy whipping cream  1 1/2 cups( 1 cup + 1/2 cup)
  • Vanilla extract 1 tbspn


Procedure: 


  • Combine cocoa powder,both sugars,well in a bowl.Add milk and whisk until sugars are dissolved.
  • Stir in heavy cream and vanilla extract.( you can whip the heavy cream for 3 to 4 mins before adding to the blender that way your ice cream will be more soft) 
  • Blend everything in a blender just for 1 to 2 mins 
  • pour mixture into the freezing bowl and freeze around 6 to 8 hrs( before freezing check the sugar add more if you feel less sugar).
  • Stir in between, after 1 hr to avoid crystal formation in the ice cream and blend again for 1 min,and keep in the freezer.( if you have ice cream machine you can avoid this step)
  • After 6 hrs enjoy yummy icecream.Make sure take out side 2 to 3 mins before serving.
NOTE: I did'nt whip the cream as i'm in a hurry...Still mine was soft.Whip the heavy cream for more better result.

Vanilla ice cream

Ice cream is a frozen food typically eaten as a snack or dessert.vanilla is frequently used to flavor ice cream,especially in North America and Europe.No fancy flavours can beat the ultimate creamy classic vanilla ice cream.coming to ice creams,I'm not much ice cream lover,as I don't eat much cold items as I always caught sore throat and cough easily soon I had ice cream.My kids love it ,and have few ice creams in the freezer.Now this time I signed up for ice creams in this marathon just  wanted to try basic ice creams.Today I'm posting simple vanilla ice cream in Blogging marathon 53 under the theme ice creams.My kids love this soft melt in mouth simple vanilla ice cream.here goes my recipe.


Ingredients:

  • Milk 1 1/2 cup(250 ml cup)
  • Heavy cream 1 cup
  • Eggs 4( only egg yolks)
  • sugar 8 oz( can use vanilla sugar)
  • vanilla extract 1 tbspn

procedure:

  • Take a large deep bowl,boil milk and heavy cream in medium heat or until you see bubbles.(5 to 10 mins)stir in between to avoid burnt in the bottom.switch off the stove when you see bubbles.
  • In another bowl whisk the egg yolks until fluffy.Gradually add sugar whisk together until they combine.
  • Mix this egg mixture in the above cream milk mixture'  gradually adding small amounts.(can mix when it is hot)
  • Transfer this mixture to another pan,and cook on low flame,until it just thickens and coats the spoon.this takes around 10 mins)
  • Pour the mixture in the freezing bowl and allow it to cool for30mins.Now add vanilla extract.
  • Keep in the airtight container and freeze  around.6 to 8 hrs.
  • Enjoy yummy vanilla ice cream.

Butter biscuits or Butter cookies( eggless)

Cookie is a small flat baked treat usually contain sugar,flour,eggs ,butter.In most countries these are called biscuits.In my childhood days I Still remember eating these yummy biscuits. They are super soft melt in mouth.Biscuits or cookies are not  much favorite to our kids.As they do not like sugary food.When I baked these cookies they just cant't stop asking me more..and keep running to my kitchen.Yeah they liked it much and very easy to prepare.Even my husband who is not favorite to cakes and cookies, tasted it.Yes he liked it.I can say very easy recipe with just 4 ingredients and less effort in the kitchen.Sure this will be one of the hit recipe in my blog.I'm posting this recipe in BM#53 under the theme Kids delight snacking all the way.Here goes my recipe.




Ingredients:


  • Maida or all purpose flour 2/3 cup( mine is 160 ml cup)
  • Corn starch 1cup
  • 1/3 cup sugar(powdered sugar)
  • 1 stick butter( around 8 tbspns)

Procedure:

  • Take a bowl mix butter and sugar until fluffy.It should be mixed perfectly soft and fluffy
  • In another bowl mix maida and corn starch.Add this mixture to the butter slowly and make a soft dough.
  • Divide the dough into two equal parts.Roll each part into thin logs.Cut these logs into small pieces shown in pic.
  • Then roll each piece into small balls and slightly press in between your palms.You may press fork on top to get small design like mine.
  • Preheat oven to 325F  and bake around 15 mins.Mine done around 14 mins. 
  • Transfer these cookies slowly with spoon to another plate.( you should transfer them when they are little warm ,in this way they stay soft)
  • Enjoy after they completely cool down.
Note: Do not bake more time or else end up crispy cookies.

chocolate chip cookies (egg less)

A chocolate chip cookie is a drop cookies that originated in the united states and features  chocolate chips as its distinguishing ingredient.The traditional recipe combines a dough composed of butter and both brown sugar and white sugar with semi sweet chocolate chips.This is very popular cookie in the united states.This week is the last week of school for my kids.My son who is in third grade love to watch my cooking and he likes to help me..hmm...My kindergartner( my daughter) who is picky eater is more of choosy.This is her most favorite cookie..Hmm I  will be more occupied  in  coming days.This is the second time I tried these cookies..Both the times I tried eggless recipe,came out awesome.Never thought that eggless version will be more tasty.Adapted the recipe here..Very easy recipe and a quick snack for kids.I'm posting this recipe in BM#53 under kids delight snacking all the way.

Ingredients;

  • All purpose flour 1 cup plus 2 tbspns( Mine is 160 ml rice cooker cup)
  • Baking soda 1/2 teaspoon
  • Unsalted butter 1/2 cup or one stick
  • Sugar(powdered) 1/4 cup
  • Brown sugar 1/4cup
  • Vanilla extract 1/2 teaspoon
  • Milk 2 tbspns
  • chocolate chips 1/2 cup


Procedure

  • Preheat oven to 350 F(180 C) for 5 mins.
  • Mix all dry ingredients i.e flour,baking soda in a bowl.
  • In another bowl  take butter and mix with hand mixer or whisk until fluffy.
  • Add both sugars,beat again for 1 or 2 mins.
  • Add vanilla extract and milk,whisk together.
  • Then add chocolate chip cookies,fold them.we can see a soft dough now.Keep in the freezer for 5 mins ,just to chill and to handle the dough easily( you can also keep in the refrigerator for 30 mins or until the dough just firm to handle)
  • Make round balls( gooseberry size) and press each ball and slowly arrange on the baking sheet.
  • Optionally you may sprinkle few chocolate chips top.
  • Bake them 10 to 12 mins,or until the edges are little brown.
  • Take out,let it cool completely to handle and enjoy yummy cookies.
Note: you can  replace 1/4 cup brown sugar( 2 tbspn molasses plus 1/4 cup white sugar)

Ribbon muruku

Jantikalu or murukulu are all time fav snack to most people. My kids love to have this any time. My daughter who is a picky eater slowly grabs from kitchen shelf and starts eating it without noticing.Usually I prepare jantikalu with rice flour and Besan or Senaga pindi but this time I replace besan with daliya or fried dal.It came out very well and stay crisp for more days.Addition of daliya enhances the taste.I'm posting this recipe in BM#53 under the theme Kids delight snacking all the way..Here goes yummy crunchy snack.



Ingredients:

  • Rice flour 2 cups
  • 1/2 cup roasted gram flour or daliya( fried chana dal)
  • 1 teaspoon Ajwain or carom seeds
  • 2 cups water or as needed
  • Ghee 1 or 2 tspns 
  • Green chilli paste 2 tspns or 1 tspn of chilli powder
  • salt to taste
  • oil for deep fry



Procedure:

  • Take a bowl mix,rice flour,gram flour,( grind Daliya or fried Dal into fine powder)green chilli paste,ghee and water
  • Add water to make thick dough like chapati dough.
  • Use small line disc maker for ribbon muruku.
  • Take small amount of dough  and stuff inside the muruku maker.
  • Heat oil in a kadai  for deep fry.When it is hot slowly press the muruku maker on  top of oil( do it carefully)
  • Fry it well on both sides,until it just firm.
